How to Make a Delicious Steelhead Poke Bowl

If you love fresh, flavorful, and healthy dishes that capture the essence of the outdoors, then our Steelhead poke bowl is a must-try! Whether you're fresh off the water or just craving a unique meal, this recipe combines the tender, mild taste of Steelhead with vibrant produce and rice for a refreshing, satisfying dish.

 

Step 1: Harvesting Your Fresh Steelhead

The key to a fantastic Steelhead poke bowl begins before you even step into the kitchen—it starts with properly harvesting your fish. If you don’t know how to catch one, check out my here. If you’re not a fisherman, or your fisherman is out of town, you can substitute with store-bought salmon, but definitely purchased wild caught!

When you catch a Steelhead, the most important thing is to bleed the fish right away. To do this, you’ll need to cut the gills as soon as possible. This will help prevent the fish from having any off-flavors and ensure that the meat is fresh and delicious.

In addition to bleeding the fish, get it on ice immediately. Keep the fish cool until you’re able to fillet it. If you cannot cook it that day, freeze it until you’re ready. This ensures that the fish stays fresh, making all the difference in the final flavor. 

Step 2: Season and Marinate the Steelhead

Before cooking, you’ll want to season the fish with a generous layer of salt. Next, add black pepper, onion powder, and a touch of steak seasoning. To bring out the flavors even more, let the fish marinate for at least 30 minutes in the fridge with these seasonings on.

Step 3: Cooking the Steelhead

Now, it's time to bake the Steelhead to perfection.

Instructions:

  1. Preheat your oven to 400°F.
  2. Lightly coat your baking dish with a thin layer of avocado oil (it has a neutral flavor that’s perfect for cooking fish).
  3. Place your Steelhead fillets in the dish skin-side down, making sure there’s enough space between each fillet if you’re cooking multiple.
  4. Bake for about 15 minutes. To check if it’s done, gently twist a fork into the thickest part of the fish. If it flakes easily, it’s ready. If it doesn’t, bake for a bit longer.

Pro Tip: Don’t overcook your fish! Steelhead should be moist and flaky, not dry.

Step 4: Preparing the Rice and Fresh Produce

While your Steelhead is baking, it’s time to prep the rice and fresh ingredients. For the best flavor, we recommend using Lundberg Organic Jasmine Rice. Here's how to cook it:

  1. Rinse the rice in water before cooking to remove excess starch, which helps it stay light and fluffy.
  2. Cook the rice in either chicken broth or beef broth for extra flavor (trust me, it makes a big difference!).

While the rice is cooking, chop up your fresh produce. Here’s what you’ll need:

  • Avocado
  • Cucumber
  • Mango
  • Green onion
  • Lime
  • Raddish (optional)

These ingredients add color, crunch, and a fresh zing that will complement the rich flavor of your Steelhead perfectly.

Step 5: Assembling Your Steelhead Poke Bowl

Once everything is cooked and prepped, it’s time to assemble your poke bowl:

  1. Start by layering the rice at the bottom of your bowl.
  2. Place your baked Steelhead on top of the rice.
  3. Add your freshly chopped produce on top.
  4. Squeeze lime juice at the end to bring in that refreshing zing.
  5. Drizzle some Primal Kitchen Yum Yum Sauce, and Sriracha over the top for the finishing touch. It adds the perfect creamy, tangy flavor, with a little spice that ties everything together.

Bonus:

Get some seaweed wraps to make little Steelhead seaweed bites that add additional flavor and texture! 

Step 6: Enjoy!
